This beautifully illustrated (French) book accompanied an exhibition of the same name at L'Institut du Monde Arabe in Paris in 2006 and was still available from their bookshop in late 2007. Here is a link to a review of the exhibition.

Sadly, one Islamic book you will not be able to get is al-Jazari's 1315 work "Kitab fi ma'rifat al-hiyal al-handasiyya" "The Book of Knowledge of Ingenious Mechanical Devices" (aka "Automata"). Pages from extant copies are all over the place ... on the left is a water clock, and on the right an elephant clock (this one in the Metropolitan Museum, New York). A project to produce a facsimile of collected pages sadly appears to have faltered.
